Cauliflower Purple
Purple cauliflower is a colourful, cool-season hybrid variety belonging to the Brassicaceae family. It is important to note that purple cauliflower is not genetically modified and gets its purple colour from anthocyanin, a naturally occurring phytochemical commonly found in fruits and vegetables. It has a mild, sweet, and nutty flavour well suited to a wide array of recipes. Although it retains its colour when cooked, the colouring will hold better in roasted and grilled preparations compared to boiling or steaming.
